Brown Rice Salad (gluten free, vegetarian)

This recipe for Brown Rice Salad has been a favorite at potlucks ever since my sister made it for a family gathering.

Yield: 6 servings

Ingredients

    2 cups uncooked organic short grain brown rice
    6 (or a small bunch) green onions including tops, finely chopped
    2-3 cups minced fresh herbs (parsley, cilantro, watercress, etcup)
    1 cup shredded cheddar cheese or vegan cheddar style shreds
    2 cups cooked fresh peas
    1/4 cup pine nuts or slivered blanched almonds
    1 to 1-1/2 cup of your favorite oil and vinegar dressing

Instructions

  1. Cook brown rice, then turn into a large mixing bowl to cool. Once cool, gently toss with 1/2 cup of the oil and vinegar dressing.
  2. Mix in green peas, green onions, minced herbs, cheese, and remaining dressing. Let stand 30 minutes.
  3. Lightly toast nuts until golden brown. Cool.
  4. Serve rice salad on a bed of shredded lettuce, garnished with the toasted nuts and herb sprigs.
