Brown Rice Salad (gluten free, vegetarian)
This recipe for Brown Rice Salad has been a favorite at potlucks ever since my sister made it for a family gathering.
Yield: 6 servings
Ingredients

2 cups uncooked organic short grain brown rice
6 (or a small bunch) green onions including tops, finely chopped
2-3 cups minced fresh herbs (parsley, cilantro, watercress, etcup)
1 cup shredded cheddar cheese or vegan cheddar style shreds
2 cups cooked fresh peas
1/4 cup pine nuts or slivered blanched almonds
1 to 1-1/2 cup of your favorite oil and vinegar dressing
Instructions
- Cook brown rice, then turn into a large mixing bowl to cool. Once cool, gently toss with 1/2 cup of the oil and vinegar dressing.
- Mix in green peas, green onions, minced herbs, cheese, and remaining dressing. Let stand 30 minutes.
- Lightly toast nuts until golden brown. Cool.
- Serve rice salad on a bed of shredded lettuce, garnished with the toasted nuts and herb sprigs.
