Best Apple Crisp (gluten free, vegan)

A recipe for Apple Crisp made with fresh ginger and pure maple syrup.

Cook time: 45 minutes
Yield: 8 servings

Ingredients

    6 apples (my favorite is a combination of Macintosh and Granny Smith)
    1 slice fresh ginger, cut into slivers
    1 tablespoon lemon juice
    2 tablespoons pure maple syrup
    2 teaspoons tapioca or arrowroot starch
    1/2 cup gluten free organic rolled oats
    1/2 cup sorghum flour
    1/2 cup fine blanched almond flour
    1 teaspoon ground cinnamon
    1/4 teaspoon sea salt
    1/3 cup pure maple syrup
    1/4 cup butter or vegan buttery sticks

Instructions

  1. Preheat oven to 350°F.
  2. Grease the bottom and sides of a 9-inch square baking pan.
  3. Peel and core the apples and cut into thin slices.
  4. Toss the apples with ginger, lemon juice, and 2 tablespoons maple syrup. Dust with tapioca or arrowroot starch and stir again to coat the slices. Pour the apple mixture into the prepared baking dish.
  5. Whisk together the flours, cinnamon, sea salt, and rolled oats. Add the butter in pieces, and using a pastry cutter or two knives, cut it into the flour blend until you have an even, sandy mixture. Stir in 1/3 cup maple syrup and then use your hands to create larger sticky crumbles. Drop the crumbles all over the top.
  6. Reduce heat to 325°F and bake for 20 minutes. Cover the top loosely with a piece of foil and continue to bake for another 25 minutes or until the apples are fork tender and the sides of the crisp are bubbling.
  7. Allow to cool slightly before serving.
