Best Apple Crisp (gluten free, vegan)
A recipe for Apple Crisp made with fresh ginger and pure maple syrup.

Ingredients

6 apples (my favorite is a combination of Macintosh and Granny Smith)
1 slice fresh ginger, cut into slivers
1 tablespoon lemon juice
2 tablespoons pure maple syrup
2 teaspoons tapioca or arrowroot starch
1/2 cup gluten free organic rolled oats
1/2 cup sorghum flour
1/2 cup fine blanched almond flour
1 teaspoon ground cinnamon
1/4 teaspoon sea salt
1/3 cup pure maple syrup
1/4 cup butter or vegan buttery sticks
Instructions
- Preheat oven to 350°F.
- Grease the bottom and sides of a 9-inch square baking pan.
- Peel and core the apples and cut into thin slices.
- Toss the apples with ginger, lemon juice, and 2 tablespoons maple syrup. Dust with tapioca or arrowroot starch and stir again to coat the slices. Pour the apple mixture into the prepared baking dish.
- Whisk together the flours, cinnamon, sea salt, and rolled oats. Add the butter in pieces, and using a pastry cutter or two knives, cut it into the flour blend until you have an even, sandy mixture. Stir in 1/3 cup maple syrup and then use your hands to create larger sticky crumbles. Drop the crumbles all over the top.
- Reduce heat to 325°F and bake for 20 minutes. Cover the top loosely with a piece of foil and continue to bake for another 25 minutes or until the apples are fork tender and the sides of the crisp are bubbling.
- Allow to cool slightly before serving.
