Paleo Banana Bread
This recipe for Paleo Banana Bread is made with almond flour and pure maple syrup. It's moist and delicious with no added oil.

Ingredients

2 cups fine blanched almond flour
5 tablespoons tapioca flour
1 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1-1/2 teaspoon baking powder
1/4 teaspoon sea salt
3 large ripe bananas, mashed
2 large eggs
2 tablespoons pure maple syrup
1 tablespoon lemon juice
1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F.
- Line a standard 8-1/2 x x 4-1/2-inch loaf pan with parchment paper.
- Whisk together the flours, spices, baking powder, and salt.
- In a separate bowl, mash the bananas well and whisk in eggs, maple syrup, lemon juice, and vanilla.
- Add the banana mixture to the flour mixture and stir until just combined.
- Pour the batter into the prepared loaf pan and bake 50 minutes or until the edges of the bread are golden brown. Turn off the oven and allow the bread to sit in the still-warm oven another 10 minutes.
- Let cool and turn out of the pan.
