Béchamel Sauce
A classic béchamel or "white sauce" recipe from my mother's recipe file.
Ingredients

3 tablespoons butter
3 tablespoons flour
1/2 onion, minced
2-1/2 cups hot milk
1 bay leaf
grated nutmeg
pepper
salt
thyme
Instructions
- On top of double boiler heat butter until bubbly.
- Add onion and let cook over low heat 3-4 minutes.
- Stir in flour and cook a few minutes.
- Add milk little by little, stirring with a whisk.
- Add bay leaf and season with nutmeg, pepper, salt, and thyme.
- Cook slowly 10-15 minutes. Strain if you please.
