Turkey Meatloaf with Oatmeal
This low-fat recipe for turkey meatloaf uses fresh vegetables and gluten free rolled oats.

Yield: 1 loaf
Ingredients

1/2 cup each finely chopped celery, onion, and green bell pepper
2 teaspoons minced fresh garlic
organic canola oil
2 pounds ground turkey (or 1 pounds ground turkey and 1 pounds ground round)
1/2 cup gluten free organic rolled oats
1/2 cup chopped tomatoes
1/4 cup skim milk or organic rice drink
2 egg whites or 1 large egg
4 teaspoons organic vegetarian Worcestershire sauce
1-1/2 teaspoon sea salt
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon ground pepper
Instructions
- Preheat oven to 425°F.
- Cook celery, onion, and bell pepper in small amount of oil in a skillet, stirring, about 5 minutes or until softened. Stir in garlic.
- Scrape into a large bowl and let cool.
- When cool, stir in remaining ingredients until blended.
- Place in a standard 8-1/2 x 4-1/2-inch loaf pan.
- Bake 50 minutes or until the meat pulls away from the sides of the pan. Let it rest 5 minutes before slicing.
